Definition

Honey sensory analysis is a trained discipline with established panels and vocabularies, particularly in Italy and France. It assesses colour, aroma, flavour, persistence and defects, and it can identify floral sources that pollen analysis confirms. It is also the only method that answers whether a honey is any good, which no instrument does.
