Ceanothus honey
Delicate and clean with a light floral sweetness and a faint spicy edge — mild, and rather more interesting than a pale honey usually is.
A pale Californian honey from ceanothus, the wild lilac of the chaparral, which covers enormous areas of the state's foothills and flowers in a blue haze each spring. It is one of the classic California varietals alongside sage and star thistle, and like them it depends entirely on the previous winter's rainfall.

Ceanothus is a nitrogen-fixing pioneer that regenerates after fire, so the chaparral honey resource has always been tied to a fire cycle. What has changed is the frequency of that cycle.
