Kiawe honey

Very mild, clean and faintly vanilla-like, with a texture that does most of the work — smooth, buttery and dissolving rather than sticky.

A naturally white, spontaneously crystallising honey from the kiawe forests of leeward Hawaii, and one of the most visually distinctive honeys in the world. It sets in the comb before extraction into a texture like whipped butter, and it is produced from a mesquite introduced to the islands from a single tree planted in Honolulu in 1828 — every kiawe in Hawaii descends from it.

Genuinely white when set, not merely pale — opaque, bright and closer to whipped butter than to anything most people picture as honey.

Among the fastest-setting honeys in the world, and it commonly granulates in the comb before it can be extracted. The set is exceptionally fine and smooth, which is why the texture is so widely admired rather than treated as a fault. The cause is a very high glucose share relative to fructose.

Prosopis pallida, a South American mesquite naturalised across the dry leeward lowlands of the Hawaiian islands.

Flowering follows rainfall rather than a fixed calendar, and the dry leeward forests can flower more than once a year.

The bees
Hawaii has no native honey bees at all. Every colony descends from introductions, the first in 1857, and the islands' native bee fauna is a group of yellow-faced Hylaeus species, several of which are federally endangered — the first bees anywhere to receive that protection.

Because it sets in the comb, kiawe honey cannot be spun in the ordinary way. It is generally taken as very fresh comb and processed immediately, or pressed, which limits volumes and keeps the price high.

What to do with it

A spreading honey above all, and one of the few where texture rather than flavour is the reason to buy it. It suits toast, scones and anything where the whipped consistency is the point.

History and traditional use

Kiawe was introduced to Hawaii in 1828, reportedly from a single seed planted at a mission in Honolulu, and spread across the dry leeward lowlands over the following century. The honey industry that followed rests entirely on that one introduction, and the tree is simultaneously regarded as invasive.
