Tulip poplar honey
Dark, buttery and malty with a smoky caramel depth and much less bitterness than its colour suggests.
A dark reddish honey from the tallest hardwood in eastern North America, and one of the region's most underrated. The tulip tree is neither a tulip nor a poplar — it is a magnolia — and its large orange-and-green flowers, held high in the canopy where nobody sees them, produce enormous quantities of nectar. The honey is dark, buttery and malty, with a smoky depth that makes it a genuine cooking honey.

Where it comes from
- Floral source
- Liriodendron tulipifera, in the magnolia family. Its flowers appear at forty metres and above, which is why most people who live among these trees have never seen one.

Frequently blended into generic wildflower honey rather than sold under its own name, which is why a substantial and distinctive American honey remains obscure.
What to do with it
One of the better cooking honeys available in North America. Its malt-and-smoke character survives the oven, which is exactly what a floral honey cannot do.
