How plants decide honey flavour
Nearly everything that distinguishes one honey from another arrives in the nectar. The bee contributes enzymes and evaporation; the plant contributes everything you taste.
What the plant supplies
- The sugar ratio. Fructose-dominant nectar makes a honey that stays liquid; glucose-dominant nectar makes one that sets hard and pale.
- Aroma compounds. Trace volatiles carried in nectar are responsible for almost all of what people call flavour.
- Minerals. Higher mineral content means darker colour, higher conductivity and a more savoury character.
- Phenolics. Colour and bitterness both track these.
- Proteins. Heather's thixotropy — its jelly-until-stirred texture — comes from nectar proteins.
- Occasionally, pharmacologically active compounds. Grayanotoxins from rhododendron; resiniferatoxin traces from euphorbia.
The chain from soil to jar
- SpeciesThe dominant variable by a very long way. Buckwheat and acacia differ more than two honeys from the same plant on different continents.
- Soil and geologyMineral content in the nectar reflects what the plant is growing in, which is part of why the same species produces different honey on chalk and on acid sand.
- Weather during the flowNectar is mostly water. Drought reduces volume and raises concentration; rain dilutes it and can wash it away entirely.
- Ripeness at harvestHoney taken before it is fully capped is wetter and less concentrated in everything else.
- HandlingHeat and time remove aroma. This is where a good honey becomes a dull one.

What the bee contributes
Less than people assume. Bees add invertase, which splits sucrose into glucose and fructose; glucose oxidase, which generates hydrogen peroxide over time; and diastase. They evaporate water. They do not add flavour.
Why blending changes everything
Most supermarket honey is a blend, and blending is not adulteration — it produces a consistent product year-round from crops that vary enormously. What it removes is character. A blend is the average of its components, and the average of several honeys is milder and less distinctive than any of them.
This is why a single-origin, single-season, single-floral honey tastes of something specific and a blend tastes of honey in general. Both are legitimate; they answer different questions.
