How can I tell what kind of honey I have?

You can usually narrow it to a small set and rarely name it exactly. Colour, how fast it sets, aroma and bitterness together rule out most of the catalogue: dark and malty with a bitter finish points at chestnut or buckwheat, near-white and rock-hard within weeks at rapeseed, pale and still liquid after a year at acacia. Only pollen analysis in a laboratory settles it, and no home test will.
Four observations that do most of the narrowing

Use the catalogue to narrow it
The honey finder filters the whole catalogue on exactly these fields — colour, intensity, crystallisation behaviour and texture — so the fastest route is to enter what you can see and read what is left. - Start with crystallisation behaviour, which is the most discriminating single field.
- Add colour, which is recorded as a range rather than a point.
- Add intensity and any bitterness, which together separate the dark honeys from each other.
- Read the shortlist's flavour notes rather than trusting one memory of a taste.
What will not tell you
Botanical origin is established in a laboratory by pollen analysis alongside conductivity, colour measurement and a trained sensory panel — and even then the answer is a dominance judgement rather than a certificate. If the jar came from someone, asking them remains by far the best method.
