Avocado honey
Dark, buttery and molasses-rich with a savoury, almost salty edge. Nothing about it suggests the fruit.
A dark, molasses-heavy honey that tastes nothing whatever like avocado, and the surprise is the point. Avocado honey is a by-product of orchard pollination in California, Mexico, Chile and Spain, and it is one of the darkest floral honeys in commerce — rich, buttery and faintly savoury, with a treacle depth that puts it closer to buckwheat than to any orchard honey people expect.

Where it comes from

- Honey bees are contracted into avocado orchards in large numbers, and they are famously reluctant workers: avocado nectar is high in perseitol and the flowers are not especially attractive, so colonies abandon them for almost any competing bloom nearby. Growers manage this by increasing hive density rather than by making the crop more appealing.

Like blueberry honey, this is a pollination by-product: the beekeeper is paid for the hives, and the honey is what is left over. Where a better nectar source is available nearby, there may be no avocado honey at all.
What to do with it
A cooking honey of real quality. Its savoury depth works in glazes, barbecue sauces and marinades in a way a floral honey never does, and its darkness survives the oven. On toast it divides people sharply.

History and traditional use
Avocado honey is entirely a creation of twentieth-century commercial orchard growing. It is a useful example of how the modern honey catalogue is shaped by what humans farm rather than by what grows wild — a honey that did not exist in any quantity before the avocado boom, and whose supply now tracks guacamole consumption.
