Pine honeydew honey
Resinous, malty and markedly less sweet than floral honey, with a woody, slightly salty depth and no floral character at all.

The most produced honeydew honey in the world, and one that depends on an insect almost nobody has heard of. Greek and Turkish pine honey is not made from nectar at all: a scale insect, Marchalina hellenica, feeds on the sap of Aleppo and Turkish pines and excretes a sugary honeydew that bees collect from the bark and needles. Greece alone accounts for a majority of global pine honey production, and in Greek beekeeping it is not a curiosity but the backbone of the industry.

Low in glucose and rich in higher oligosaccharides such as melezitose and raffinose that nectar honeys largely lack. Those larger sugars interfere with crystal formation, so pine honey commonly stays liquid for years — one of the most reliable practical differences between honeydew and blossom honey.

Total sugars are lower than in floral honey because a substantial fraction is made up of oligosaccharides not counted as fructose or glucose. The high pH and conductivity are the defining honeydew signatures.

Where it comes from
- Floral source
- No floral source. The sugar originates in the phloem sap of Pinus brutia and Pinus halepensis and passes through Marchalina hellenica before a bee ever touches it — the insect is as essential to this honey as any flower is to a floral one.

A second smaller flow occurs in spring. The autumn flow is the main one, and it depends on the scale insect's population cycle as much as on the weather.
- The bees
- Colonies are moved into pine forest for the flow, and the working pattern is unlike a floral one: bees forage over bark and needles rather than flowers, and the honeydew is available through the day rather than in a morning nectar window. A honeydew flow can also carry the colony into winter in poor condition if the beekeeper takes too much, because honeydew honey's high mineral content is harder for bees to overwinter on.

- The EU honey directive separates honeydew honey from blossom honey and sets a higher electrical conductivity floor for it, which is the compositional line that distinguishes the two. Greek pine honey typically sits far above the threshold.

Marchalina hellenica has been deliberately introduced to pine stands in parts of Greece and Turkey to establish the flow, which makes pine honey one of the few honeys whose production involves managing an insect other than the bee. The practice is contested on forest-health grounds.
What to do with it
The everyday breakfast honey of Greece, eaten on bread and with yoghurt. Its restrained sweetness is what makes it usable in quantity — a very sweet honey in the same role would be cloying by the third mouthful.

History and traditional use
Honeydew honey was long treated across northern Europe as an inferior product — dark, unsellable, and dangerous to leave on a colony over winter. Greek and Turkish practice inverted that judgement entirely, building an industry on it. The difference is climate: an Aegean colony does not face the long confinement that makes high-mineral winter stores a problem.
