Tupelo honey
Buttery and clean with a pear-and-green-apple lift, and a long soft finish that never turns cloying.
The most fructose-dominant honey in commerce, and the one honey that genuinely does not granulate. Tupelo comes from a single tree — the Ogeechee tupelo, Nyssa ogeche — growing in the river swamps of the Florida panhandle and south Georgia, and it is produced nowhere else on earth in any quantity. Pale gold with a green cast, buttery, pear-like and clean, it is the closest thing American beekeeping has to a grand cru, and the reason is a floodplain barely a hundred miles across.

Pale gold with a distinct greenish cast when held to the light — the green is the field mark buyers look for.
On setting: Effectively never crystallises, so the question rarely arises. A jar that has set is either not tupelo or is heavily blended.

Tupelo has the highest fructose share of any commercial honey — roughly 43 to 45% fructose against 26 to 30% glucose, a ratio near 0.65 and sometimes lower. Glucose is the sugar that comes out of solution first, and there is so little of it relative to fructose that the solution is barely supersaturated. Left in a cupboard, genuine tupelo will still be liquid after two years. This is the clearest demonstration in the catalogue that crystallisation is chemistry rather than quality.

Where it comes from
- Floral source
- Nyssa ogeche, the Ogeechee or white tupelo. Black tupelo (N. sylvatica) and water tupelo (N. aquatica) grow alongside it and yield a darker, faster-setting honey — the trade distinction between white tupelo and everything else is not marketing.
- Origins
- The Apalachicola, Chipola and Ochlockonee river basins of the Florida panhandle, and the Ogeechee and Altamaha basins of south Georgia. Effectively nowhere else.

Two to three weeks, and hostage to the river. A late freeze kills the bloom and a flood at the wrong moment drowns it; several years in a decade produce no crop at all.
- The bees
- Hives are floated into the swamp on barges and platforms because there is no dry ground to put them on. Beekeepers strip the colonies of stored honey before the flow so that nothing else contaminates the crop, which is an unusual amount of trouble taken for a two-week window.

- No regulator sets a threshold. The industry test is physical rather than palynological: a genuine white tupelo honey has a fructose-to-glucose ratio high enough that it will not granulate, and pollen analysis at the University of Florida has been the traditional arbiter for premium lots.

Almost always sold raw and lightly strained, because there is no crystallisation to prevent and nothing to gain from heating it.
What to do with it
Eat it cold and eat it plainly. Tupelo costs several times what an ordinary honey costs and every one of its distinguishing qualities — the pear note, the softness, the texture — is destroyed by heat. Cooking with it is a way of paying a premium for sucrose.

Where this honey sits in the catalogue
History and traditional use
Commercial tupelo beekeeping dates to the late nineteenth century along the Apalachicola. It entered wider culture through Van Morrison's 1971 album and the 1997 film Ulee's Gold, which is a rare case of a honey's reputation being made by art rather than by trade. The industry's real threat is hydrological: reduced freshwater flow down the Apalachicola stresses the tupelo stands the whole crop depends on.
- Recommended in the American south to people avoiding glucose spikes, on the strength of the fructose share — a folk rationale that runs well ahead of any clinical evidence.
Traditional use records that people have done something, and for how long. It is not evidence that it works.
