Yemen honey
Producer of sidr honey, among the most expensive and most counterfeited honeys in the world, from the ziziphus trees of the wadi systems. Yemeni beekeeping is migratory and very old, and it has been severely disrupted by war.
How honey is produced here
Colonies are moved between wadis as the acacias and ziziphus flower, in a pattern documented for centuries. Extremely dry air gives very low moisture and dense honey. Conflict has destroyed hives, closed migration routes and displaced beekeepers, which has both reduced supply and made verification considerably harder.

- Samar honeyAmber · PronouncedStrong and resinous with a warm caramelised depth and a distinct dry-country character — more assertive than sidr and less floral.
- African acacia honeyLight amber · PronouncedWarm and spiced with a caramel base and a dry, faintly smoky finish — considerably more assertive than European acacia honey, which it is named after and resembles in no way.

It is native to Europe, Africa and western Asia and has been carried by people to every continent except Antarctica.

It is small, yellow, nervous and superbly adapted to desert heat, and it has been progressively displaced within Egypt by imported Italian stock.
- Dwarf honey beeApis floreaThe smallest honey bee, and the one that does its waggle dance the right way up. Apis florea builds a single small comb wrapped around a twig in a bush, and because the top of that comb forms a horizontal platform, the dancing bee points directly at the food source rather than translating the direction into an angle against gravity. It is the simplest form of the dance language and probably the ancestral one.

Honey holds a specific place in Islamic tradition, with a chapter of the Qur'an named for the bee, and Yemeni honey has carried a premium reputation across Arabia for centuries. It is given as a high-status gift and used as a tonic.
