Fluid, sharply acidic and floral — closer to a fruit syrup than to honey as most people know it, and the acidity is normal rather than spoilage.

The honey of the largest and most widely kept stingless bee of northeastern Brazil. Uruçu colonies are strong by meliponine standards — several thousand bees rather than a few hundred — which makes this one of the few stingless bee honeys produced in quantities a market can be built on.

Brazilian research on meliponine honey is the best-developed anywhere, driven by the need to write standards the product could actually meet. The moisture figure is the one that matters and it is consistently above the Codex maximum for Apis honey.

Floral source
Atlantic forest margins and caatinga flora. Melipona scutellaris forages over a much shorter radius than a honey bee, so the honey reflects a genuinely local flora rather than a landscape one.

Harvest

Harvested after the rains, and a strong colony yields perhaps three to six litres a year against fifty or more kilograms from a honey bee hive.

The bees
Melipona scutellaris has no functional sting and stores honey in clustered wax-and-resin pots rather than hexagonal comb. It is the largest Brazilian meliponine in common cultivation and the one most meliponiculture in the northeast is built around.

Harvested by suction from the storage pots or by cutting them open, and refrigerated or dehumidified immediately. Controlled dehumidification without heat is now the standard commercial method in Brazil.

What to do with it

Treat it as a sharp syrup rather than as honey. Excellent over fruit and in a dressing, and genuinely wrong on toast.

History and traditional use

Melipona scutellaris depends on large hollow trees for nesting, and Atlantic forest clearance has reduced wild colonies sharply. Managed boxes are now a conservation measure as much as a production one.

  • Meliponiculture in northeastern Brazil is an indigenous practice that predates European contact and continues as a smallholder tradition.
  • Used in regional folk medicine for eye and throat complaints, a use recorded across several stingless-bee-keeping cultures independently.

Uruçu honey cannot meet the Codex Alimentarius moisture limit written for Apis mellifera honey, and Brazil has written separate specifications for meliponine honey.

Moisture routinely runs at 25 to 30 per cent against the Codex maximum of 20 per cent. This is a product identity and regulatory fact, well documented in Brazilian food-standards work.
