Honeys whose records carry an authenticity note — the ones with documented exposure to adulteration or mislabelling.

What these have in common

Honey fraud follows economics and chemistry together. A honey is exposed when it is expensive enough to be worth cutting, mild enough that syrup does not taste wrong, and physically stable enough that a cut jar behaves as a buyer expects. Acacia hits all three — pale, mild, expensive and naturally slow to crystallise. Manuka is a different case: its price is high enough that mislabelling rather than dilution is the main route, and far more is sold worldwide than is produced.

Where to start

Read the record before the label. Where a honey in this list is one you buy regularly, the useful defences are buying from a named producer, being suspicious of prices well below the market, and treating vague origin statements — a blend of EU and non-EU honeys — as the non-answer they are.

What this group is not for

Panic. Most honey sold in most markets is what it says it is, and the testing regime — isotope analysis, NMR profiling, foreign-oligosaccharide markers — is improving faster than the fraud is. This is a list of where care is worth spending, not a warning against the honeys on it.

Deciding between two of them

  • Manuka vs ordinary honey The most expensive honey in the world against a supermarket jar. One difference is real chemistry; most of the rest is not what it is sold as.
  • Mānuka vs kānuka honey Two New Zealand scrub honeys from trees that grow side by side, look similar and yield honeys with almost nothing in common chemically. For years the cheaper one was sold as the expensive one.
  • Lavender vs orange blossom honey The two great perfumed honeys of the Mediterranean. Both carry their flower's aromatics almost intact, which is rare — and they are wanted for opposite reasons.
  • Tupelo vs acacia honey The two honeys that genuinely do not crystallise, from opposite sides of the Atlantic. Same chemistry, very different flavour, and a very different price.
  • Heather vs manuka honey The two thixotropic honeys — both form a gel at rest and loosen when stirred. One is priced on a chemical marker and the other on the difficulty of getting it out of the comb.
