Germany honey
The largest honey market in Europe and one of its most demanding. Germany consumes far more honey than it produces, and the standards its buyers apply — particularly around honeydew and around adulteration testing — shape what the rest of the continent can sell.
How honey is produced here
A domestic crop dominated by spring blossom honey and by rapeseed, with forest honeydew from the Black Forest and Bavaria as the prestige product. German consumers expect set honey as the default, which is a consequence of a rape-heavy landscape rather than a preference that came first.

- Linden honeyExtra white · ModerateFresh and cooling — mint, balsam and lime blossom, with a clean herbal sharpness no other pale honey has.
- Forest honeydew honeyDark amber · PronouncedResinous, malty and mineral, with far less sweetness than its darkness suggests. Closer to treacle and pine forest than to anything floral.
- Silver fir honeyDark amber · PronouncedMalty, resinous and barely sweet, with a balsamic depth and a long woody finish. One of the least sugary honeys there is.
- Spruce honeydew honeyAmber · PronouncedMalty and caramelised with a woody depth and restrained sweetness — warmer and less balsamic than fir honeydew.
- Beech honeydew honeyAmber · PronouncedRich and malty with a resinous depth, a low sweetness and a distinctly savoury mineral finish — a serious honey, and quite unlike anything else New Zealand produces.
- Heather honeyAmber · IntenseStrong, smoky and slightly bitter, with a lingering woodfire-and-toffee character. One of the most complex honeys produced anywhere.
- Phacelia honeyWater white · MildMild, clean and gently floral with a faint herbal freshness — an easy honey with no rough edges at all.
- Apple blossom honeyExtra white · DelicateDelicate and lightly fruity with a soft marzipan note and a clean finish — recognisably spring, and gone if you are not paying attention.
- Cherry blossom honeyExtra white · ModerateMarzipan first, then a light stone-fruit sweetness — the almond note is the defining character and it is unmistakable.
- Blackberry honeyExtra light amber · ModerateWarm, mellow and gently fruity, with a soft jammy note and a hint of the fruit without any of its sharpness.
- Hawthorn honeyLight amber · PronouncedStrong and slightly strange — marzipan and cut hay over a distinctly animal undertone that divides people sharply.

- DandelionTaraxacum officinaleThe pollen is what makes it critical. It arrives when colonies are expanding fastest and have the least in reserve, and bumblebee queens emerging from hibernation depend on early sources like this one to found a nest at all.
- Goat willowSalix capreaThe single most important early-season pollen source across much of Europe. Its value is not in yielding honey but in what it makes possible six weeks later.
- LimeTilia cordataExtraordinary nectar productivity concentrated into a very short window. Its urban prevalence makes it disproportionately important to city beekeeping.

- Western honey beeApis melliferaThe bee behind essentially all the world's honey, and the one most people mean when they say 'bee'. Apis mellifera is a perennial eusocial insect that overwinters as a living cluster rather than dying back each year — which is the whole reason it stores honey in quantity, and therefore the reason it was ever domesticated. It is native to Europe, Africa and western Asia and has been carried by people to every continent except Antarctica.
- BumblebeesBombusLarge, furry, loud, and cold-tolerant in a way no honey bee is. Bumblebees run annual colonies: a mated queen emerges alone in spring, founds a nest by herself, raises workers through the summer, produces new queens and males in late season, and then the entire colony dies except those new queens. They do make honey, in the strict sense of ripened nectar stores — just a few days' worth, because they have no winter to survive as a colony.
- Mining beesAndrenaSolitary ground-nesting bees, and the small volcano-shaped mounds of fine soil that appear on lawns and bare paths in April are theirs. Mining bees are the classic spring solitary bees of the northern hemisphere: short-lived, entirely harmless, often nesting in dense aggregations that look like a colony but are not, and a great many of them are specialists that visit only one kind of flower.
- Red mason beeOsmia bicornisThe bee in your bee hotel. Osmia bicornis is the commonest cavity-nesting solitary bee in northwest Europe, the one most gardeners actually manage to attract, and one of the most effective fruit pollinators known — a few hundred females will pollinate an orchard acre as thoroughly as a honey bee colony of tens of thousands. It is also, for practical purposes, incapable of stinging anyone.
- Leafcutter beesMegachileThe bees responsible for the neat semicircular notches cut from rose and lilac leaves every summer. A female leafcutter bee cuts oval pieces of leaf with her mandibles, carries each one back curled beneath her body, and uses them to line and seal a nest cell — the cells end up looking like small green cigars. The damage to the plant is cosmetic and the bee is one of the most efficient pollinators in agriculture.
- Carniolan honey beeApis mellifera carnicaThe second most widely kept honey bee subspecies, and the one most European beekeepers choose over Italian stock. Carniolans come from the eastern Alps and the Balkans, and they are adapted to a short intense season: explosive spring build-up, rapid contraction in a dearth, frugal winter consumption — and a swarming instinct that gives beekeepers more work than any other trait.
- Tawny mining beeAndrena fulvaThe bright orange bee that appears on lawns in April and produces small volcano-shaped mounds of soil, prompting a great many alarmed enquiries about infestations. It is a solitary bee, it is entirely harmless, the mounds disappear within weeks, and it is one of the most conspicuous and most misidentified insects of the British spring.
- Garden bumblebeeBombus hortorumThe longest-tongued common bumblebee in Europe, and the one that can feed legitimately from flowers every other bee has to rob. A garden bumblebee's tongue can exceed 15 mm — nearly three times a honey bee's — and it flies with it extended in front like a lance. That single anatomical fact makes it the key pollinator of deep-flowered plants such as red clover, foxglove, comfrey and honeysuckle, and it is also why the species has declined as those plants have.
Honey in Germany
The Deutscher Imkerbund's quality mark imposes limits tighter than the EU directive — lower moisture, higher enzyme activity, no heating above hive temperature — and it is one of the few voluntary national standards anywhere that genuinely constrains what can be sold under it.

- Single-source vs mixed forest honeydew — Honeydew honey is sold both as a named species crop and as a general forest honey. The distinction is genuine and it affects both character and price.
